As an oenologist, Théodore, assisted by Marie-Claire’s know-how, has the entire technicality required for his inventiveness to excel himself each year and develop new cuvees.

suppleness of wines

Following a vinification mode including alcoholic fermentation of juices in thermo-controlled tanks, and systematic malolactic fermentation for the suppleness of wines, he develops each cuvee with the purpose of producing expressive wines.

Collections From Terroir

In the winery, plots and grape-varieties are separated. The wines which have not been cleared are used for blending tests. The ambition: to develop real Collections from the terroir and about the House’s history, with wines that are structured and complex, mature and round but still easy to drink.

Original Alcohols

François’ commitment to work alcohols prompted him to create a winery. Today Théodore is still busy with this project by producing original alcohols, aged 10 to 20 years in barrels.
